What does the World Chocolate Awards symbol represent?

The symbol is based on a cross sectional view of a cacao pod. The cacao beans from inside the pod are the fundamental raw material used to make chocolate.

The symbol represents knowledge about chocolate and its natural origin. The five cacao beans inside white pulp are the first stage in the manufacture of chocolate or germination of the cacao tree. Each bean is asymmetrical, representing the acknowledgment of nature and variety.

The five beans may also stand for five human senses which chocolate can stimulate. The rustle of opening a wrapper or the snap heard when breaking a piece of chocolate from the bar can be appetising.

The font was designed in order to remind us of the history of cacao: the ancient civilisations that cultivated it; the explorers who brought it to Europe; the centuries of craftsmanship and innovation that chocolate makers inherit that make what we taste today possible.

Yes, there are many organic chocolates listed in the guide book.

 

Are there any “sugar free” chocolates included in the World Chocolate Awards guide?

There are several chocolates listed in the guide book which have no added sugar. Some naturally occurring sugars will be present in the ingredients.

When it is time to focus on the next World Chocolate Awards we will disclose if dark chocolates are included. The present guide book awards the finest milk chocolates, some of which have a very high cocoa content: the highest being seventy five percent.

 

Rivoire are listed in the guide as a cacaofèvier. Is this correct?

No. We have been provided information that Rivoire do not roast cacao in their workshop, but they do mill cocoa paste. An Errata sheet has been inserted into the book to correct this.
